PASTA MADE THE ITALIAN WAY

Stefano feels deeply connected to his roots. In this spirit, he launched his line of pasta, available exclusively at IGA. “Our pasta is made using bronze moulds,” he gushes. “That’s what gives them a more porous surface, so the sauce sticks better to the pasta!”

He launched six pasta varieties—spaghetti, linguine, fusilli, farfalle, macaroni, and penne rigate—all 100% Italian know-how! In addition to being made in a bronze mould for greater porosity, the drying process is slow, for better texture. Another important component: the flour. “I wanted clean flour,” he exclaims. That’s why he chose an Italian flour from fields with no added glyphosates. “The flour we use comes from a small family business in Lazio, where my mom is from. And the company is led by a woman who sure knows her pasta!” His favourite variety? “Fusilli,” he says, “because the sauce slides into the spiral… Plus, it reminds me of my childhood!”

Simple meal ideas for everyone!

Penne rigate   rosé sauce   baby spinach

Penne rigate + rosé sauce + baby spinach
Penne rigate blend perfectly with rosée sauce. Once the pasta and sauce have been mixed together and seasoned, chop some baby spinach and sprinkle atop before serving. Belissimo and delicioso! Flavourful tip: Just before serving, add some toasted pine nuts for even more flavour.

Traditional rosé sauce: Slow-cooked Italian tomatoes, to which we add cream, as well as pecorino cheese, butter, garlic, and fine herbs.

Macaroni + meat sauce + cheese, baked
A comforting dish for the whole family: In a baking dish, mix the thick sauce with the macaroni al dente and a little cooking liquid. Top with mozzarella. Flavourful tip: Add some minced basil leaves over top just before serving.

Meat sauce: It takes you way back, to nonna’s comforting dishes! This mixture of pork, beef, and veggies cooked slowly offers a rich, flavourful texture.

Spaghetti + tomato and basil sauce + oysters
Get a taste of the ocean with this simple recipe made with freshly cooked oysters, with or without shells, mixed with the sauce and spaghetti al dente. Flavourful tip: A touch of dill, fresh or not, can really elevate this dish.

Tomato and basil sauce: Mamma’s traditional italian sauce. Just a few simple ingredients: Italian tomatoes, basil, extra-virgin olive oil, garlic, and sea salt.

Linguine   Alfredo sauce   chicken pieces

Linguine + Alfredo sauce + chicken pieces
Use your white-meat chicken leftovers for a complete meal: cut into strips or cubes, coat the chicken with sauce and add the linguine. That’s it! Flavourful tip: Just before serving, mince some tarragon leaves—it goes perfect with chicken.
Alfredo sauce:
This sauce is the envy of even the best Italian chefs! It has all the ingredients for rich, creamy smoothness with Parmigiano Reggiano and Pecorino Romano cheese, butter, and cream.

Spaghetti + sausage and mushroom sauce + fresh basil
Here, it’s all about the sauce—a blend of sausage, mushrooms, and chopped fresh basil at the finish. It’s simple, effective, and devilishly good! Flavourful tip: Add a few halved cherry tomatoes.
Sausage and mushroom sauce:
The simplicity of its ingredients make this the perfect solution for those busy weeknight dinners. It gets its rich, elevated taste from traditional Italian sausages, mushrooms, and tomatoes.

Penne rigate + arrabiata sauce + shrimp
This winning combo is reminiscent of southern Italy: A spicy sauce that melts into the penne and coats the shrimp. Add a drizzle of good-quality olive oil and enjoy! Flavourful tip: Add flaked canned tuna to your dish… It’s delicious!
Arrabiata sauce:
In Italy, this sauce has character! Made with Italian tomatoes, olive oil, sea salt, garlic, and crushed peppers.

Linguine + marinara sauce + Italian sausage
A flavourful dish made in the frying pan, with grilled sausage slices, a savoury sauce, and linguine al dente. Flavourful tip: Add a generous amount of freshly-grated parmesan cheese.
Marinara sauce:
Originally from the Napolitana region, our marinara sauce contains fresh and simple ingredients, such as tomatoes, olive oil, garlic, onions, and sea salt.

Tricks

To cook your pasta perfectly, you need to:

  • Pour enough water into a large pot
  • Have enough salt, ideally coarse salt, on hand
  • Taste the pasta to ensure it stays al dente (firm to the bite)
  • Stir while cooking, so the noodles don’t get stuck together
  • Mix the pasta into the sauce for 1 minute.

For every pasta, there’s a sauce: Each type of pasta has its “perfect match.” For instance, long and thick pasta is best served with a chunky sauce, like Long and thin pasta (like capellini), on the other hand, are more suited for light sauces, like tomato, pesto, or just a drizzle of olive oil and parmesan. Long and flat pasta (think tagliatelle, fettuccine, or papardelle) like heavier sauces, like a cream, mushroom, or cheese sauce.

Serve like a pro: Preheat your serving platter, add your parmesan at the very end, do not put too much sauce, add the pasta to the sauce, not the other way around, and if the sauce is too thick, add a bit of cooking water.

What not to do: Do not rinse your pasta in water or add oil to the cooking water.
