Ingredients

750 mL (3 cups) frozen strawberries
60 mL (1/4 cup) sugar
750 mL (3 cups) strawberry ice cream
500 mL (2 cups) vanilla ice cream
To taste, store-bought whipped cream
4 strawberry wafers (optional)
4 small bunches fresh mint leaves (optional)

Directions

In a saucepan, combine strawberries and sugar and bring to a boil. Reduce heat and simmer for 2 minutes. Remove from heat and coarsely mash with a fork. Refrigerate for 30 minutes or until cool.
To build strawberry parfait, place one scoop of strawberry ice cream in a parfait glass, then add strawberries and one scoop of vanilla ice cream. Repeat, taking care to add strawberries between each scoop of ice cream. Top with a scoop of strawberry ice cream.
Garnish with whipped cream and a strawberry wafer, then decorate with a small bunch of mint leaves.
