- Place 32 pieces (15 mL/1 tbsp. ea.) of cookie dough on two parchment-lined baking sheets and bake according to package instructions. Remove cookies from oven and cool completely.
- Set ice cream at room temperature to soften, about 5 to 10 minutes. Place a small scoop of ice cream on a cookie and top it with a second cookie to make a sandwich, pressing down gently to push ice cream toward the edges. Place sandwiches on a baking sheet and freeze until firm (about 1 hour).
- Dip the sides of the ice cream sandwiches into the candies, nuts, or mini white chocolate chips, and then serve or return to the freezer.
Chef's secret: You can prepare these sandwiches a few days ahead of time and store in the freezer, individually wrapped in plastic wrap.
