Place rack in centre of oven. Preheat oven to 190 °C (375 °F). Line two baking sheets with silicone baking mats or parchment paper. Arrange graham cracker squares on baking sheets, making sure there’s space between them.
In a bowl, combine flour, baking powder and salt.
In another bowl, cream butter, brown sugar and peanut butter with an electric mixer for 2 minutes. Add egg and beat for 3 minutes until brown sugar is completely dissolved. At low speed, add in dry ingredients. Using a wooden spoon, stir in peanuts.
Use a 45 mL (3 tbsp.) ice cream scoop to shape dough into balls. Put half a marshmallow in the middle of each ball. Using your hands, close dough around marshmallow to form a ball. Place dough ball on a graham cracker square. Use your fingers to flatten dough slightly. Repeat with remaining dough balls, marshmallows and graham crackers.
Bake in the oven, one baking sheet at a time, for 10–11 minutes. Let cool for 5 minutes.
Meanwhile, microwave hazelnut spread for 30 seconds in a small bowl. Using a spoon, drizzle spread over s’mores. Let cool before eating.
