To make Pie Dough
- In a large bowl combine flour and salt and whisk together.
- Add the butter and lard to the bowl. Cut the butter and lard into the flour using a pastry blender or your hands until both are in pea size pieces.
- Slowly pour in the water and mix until the dough can be formed into a ball. Pat the ball into a disc and wrap with plastic wrap and chill for 2 to 4 hours.
- Preheat oven to 400 F
- On a floured work surface roll out the dough into a disk large enough to fit a 9-inch pie pan. Place the dough into the pan and crimp the edges of the dough with your fingers or a fork. Put the pie shell in the freezer for 15 minutes before blind baking.
- Blind bake the pie shell weighed down with foil and baking weights for 20 minutes. Remove the foil and continue to bake for 15 more minutes. Remove from the oven and let cool for 10 minutes while you make the filling.
- Turn oven down to 375 F
- In a medium bowl combine eggs, sugar, maple syrup, vanilla, salt, flour and butter and whisk together until smooth.
- Place the pie shell on a large baking sheet then pour the filling in.
- Bake for 35 to 45 minutes until the filling has just set.
- If you notice the pie crust getting too dark cover lightly with tin foil until the filling has cooked.
