225 g (1/2 lb.) tartare-grade salmon fillet
125 mL (1/2 cup) maple syrup
125 mL (1/2 cup) tamari sauce
1/4 celery root, finely julienned
1/4 red cabbage, finely julienned
1 green apple, finely julienned
5 mL (1 tsp.) Sushi à la maison Sesame Mayo
15 mL (1 tbsp.) rice vinegar
To taste, fleur de sel
To taste, olive oil
1 avocado, cubed

Directions

Cut 10, 1-cm (½-in.) thick slices from salmon fillet’s thickest part.
Place salmon slices in a re-sealable plastic bag and add maple syrup and tamari sauce. Marinate in fridge for 2 hours.
In a bowl, combine celery root, red cabbage, green apple, mayo, rice vinegar, fleur de sel, and olive oil. Set aside.
Recuperate marinade and reduce in a skillet over medium-low heat until it thickens.
Place sashimi on reserved salad and top with avocado cubes. Drizzle with tamari and maple sauce.
