Directions

  1. Soak bamboo skewers for 30 minutes in water to prevent them from burning on grill.
  2. Slice each chicken breast lengthwise into 5 strips. Set aside.
  3. For the marinade, combine coconut milk, fish sauce, ginger, cilantro, and turmeric in a large bowl.
  4. Add chicken strips to marinade and toss to combine.
  5. Let chicken marinate from 10 to 15 minutes or up to one day in fridge.
  6. Thread chicken strips onto skewers.
  7. Preheat barbecue to medium-high.
  8. Brush grill well with oil.
  9. In the meantime, prepare peanut sauce. In a small saucepan, whisk curry paste, coconut milk, lime juice, peanuts, and brown sugar, and bring to a boil.
  10. Reduce heat and simmer until sauce slightly thickens, about 5 minutes. Set aside.
  11. Reduce barbecue heat to medium. Place skewers on grill.
  12. Grill skewers, flipping as needed, until chicken is cooked through but still juicy, or internal temperature reaches 77°C (170°F), about 5 to 8 minutes.
  13. Serve chicken skewers with reserved spicy peanut sauce.
  14. Top with chopped peanuts, cilantro leaves, and lime wedges, if desired.
