- With the rack in the middle position, preheat the oven to 400°F (200°C).
- In a food processor, finely chop the onion, garlic and parsley with the oil, honey and spices. Transfer into a bowl. Add the meat. Season with salt and pepper. Mix well.
- Place the pitas on a baking sheet. Lightly oil the surface of the pitas. Spread the meat mixture over the pitas, about ½ cup (125 ml) per bread. Bake for 15 minutes or until the meat is cooked through and slightly browned. Finish cooking under the broiler as needed.
- Meanwhile, place the tomatoes in another bowl. Toss with oil and season lightly with salt.
- In a third bowl, combine the cucumbers and dill. Season with salt and pepper.
- Place the meat-topped pitas, tomatoes, cucumbers, hummus, yogurt, feta and more parsley leaves at the centre of the table. Let everyone garnish their own pitas.
Chef’s tip : You will have enough toppings for 4 to 5 pitas, which corresponds to the usual 250 g package of pita breads.
