Directions

Mix all seasoning ingredients and use the mix to thoroughly coat steaks. Set aside, preheat grill and prepare chermoula.
Heat coals to desired temperature.
In a large food processor, add herbs, garlic, spices, a generous pinch of salt, and lemon juice. Blend ingredients, adding a drizzle of olive oil while it’s running. Avoid overmixing to retain some texture. Taste and adjust seasoning to your liking. Remove food processor bowl and set aside until steaks are ready.
Coals have reached the right temperature when white ash has formed on all sides.
Spread coals evenly and sear steaks directly on coals. After 3 minutes, try flipping steaks. If the coals stick, let cook for another 30 seconds. When you can lift the steaks, flip them, ideally onto new pieces of charcoal. If one or two coals remain stuck to the steaks, remove the coals with a pair of tongs. Cook other side for 3 minutes and check for doneness with a thermometer. With this method, the meat will continue to cook for longer than usual, so instead of removing the steaks 5 degrees before their doneness, remove them 10-15 degrees early to avoid overcooking. Remove steaks at 46°C (115°F) for a doneness of 54°C (130°F), or at 49°C (120°F) for a medium doneness of 57°C (135°F). When they reach the desired internal temperature, remove steaks from the coals and let rest for 5 minutes.
After they’ve rested, the steaks are ready to serve. Drizzle 2 tablespoons of chermoula on top and garnish with pomegranate seeds before serving.

Chef’s secret

The spicy seven-spice blend works well with the charring of the steak, adding flavour and blending beautifully with fresh flavours of the chermoula.
Charcoal grilling is a great way to enjoy time with friends.
Remember to remove steaks before they reach their desired doneness (10-15 degrees).
You can also cook your steaks on a traditional barbecue.
