An onion and coffee jam that’s perfect for spreading over toast, for topping a pizza or for adding to a sandwich.
- In a pot over high heat, soften the onions in the butter for 10 minutes. Season with salt. Add the brown sugar and vinegar. Cook for 10 minutes while stirring. Add the coffee and continue to cook over very low heat just until the liquid has completely evaporated, about 1 hour, stirring a few times. Season with salt and pepper.
- Pour into an airtight container and let cool completely.
