Directions

  1. Put the piece of fat in the freezer for 1 hour, to make it easier to cut into thin slices.
  2. Place the cold (but not frozen) fat on a work surface.
  3. Using your sharpest knife, cut the lard into thin slices. The thinner the slices, the crispier the rinds will be.
  4. Line a baking sheet with paper towel.
  5. In a pot of boiling water, blanch the pork fat slices for 2 to 3 minutes. Drain well.
  6. Place on baking sheet and refrigerate. Let dry overnight if possible.
  7. Preheat the fryer to 180°C (350°F).
  8. Cook and fry pork rinds for 3 to 4 minutes or until golden. Drain.
