1. Arrange the skewer ingredients on your work surface.
2. On each skewer, pierce a piece of red onion, followed by pieces of red and orange pepper, seitan, and pineapple. Repeat the process with the remaining ingredients.
3. Cook the skewers for 2 minutes on each side on a hot barbecue, 230 C to 260 C (450 F to 500 F).
4. Brush with the bottled barbecue sauce while cooking.
5. Serve immediately, with the remaining sauce and fresh herbs. 

Chef’s Secret 

• Seitan is pre-cooked, all you need to do is heat it up. To maintain its flavour and texture, avoid overcooking.
