Preheat oven to 200°C (400°F). Coat a baking sheet with a thin layer of vegetable oil. Press tofu with paper towel.

In a bowl, toss tofu with cornstarch. Arrange cubes evenly on the baking sheet. Bake for 30 minutes, or until tofu is crispy and golden on all sides, turning halfway through.

To prepare the dipping sauce; whisk together the brown sugar, rice vinegar, soy sauce, ginger, fish sauce (optional), sesame oil and hot pepper flakes (optional). Serve dipping sauce with tofu. Serve with vegetables and basmati rice.
CHEF’S TIP
Serve the tofu while it is still hot, so that it remains crispy. Garnish with chopped green onions and toasted sesame seeds for an added dash of flavour.
