2 sheets of nori
500 ml (2 cups) sushi rice, cooked
4 crab-flavoured Alaskan pollock sticks
80 g (3 oz) cream cheese, cut into sticks (1/3 brick)
½ English cucumber, seeded and julienned
½ avocado, thinly sliced
15 ml (1 tbsp) masago
3 to 4 slices of smoked salmon or tartare-grade fresh salmon
To taste, Japanese mayonnaise

Directions

Lay a sheet of nori on a sushi mat. Spread 1 cup of the sushi rice on the sheet of nori and spread it with your fingers, leaving a 2 cm (1/2 in) strip without rice at the top of the sheet.
Place half of the pollock sticks, cream cheese, cucumber juliennes, avocado strips and masago in the center of the sheet.
Roll firmly using the sushi mat to form a tight roll.
Place 1 to 2 slices of smoked salmon or fresh salmon on the roll.
Carefully cut into 8 pieces using a sharp knife.
Repeat the same steps for the second roll.
Serve with Japanese mayonnaise.
