Salad

  1. With the rack in the middle position, preheat the oven to 425°F (220°C). Line a baking sheet with a silicone mat or parchment paper.
  2. On the baking sheet, coat the sweet potatoes, apples and bacon with half of the vegetable oil and the chili powder. Season with salt and pepper. Bake for 20 minutes or until the potatoes are tender and golden, stirring halfway through cooking. Let cool.

Creamy Dressing

  1. Meanwhile, in a bowl, whisk together all of the ingredients. Season with salt and pepper. Set aside.
  1. In a large bowl, massage the kale with the remaining vegetable oil, the lemon juice and a pinch of salt for 2 minutes to soften. Spread the kale out in a large serving dish. Top with the cooled sweet potato mixture, walnuts and shallot. Drizzle with the creamy dressing.

Chef’s tip : The bacon adds a smoky flavour to the salad.
