Cucumber rolls
- Separate lettuce leaves, clean and set aside.
- Thinly slice cucumber lengthwise, leaving the core untouched, to create ribbons fine enough to fold without breaking. Save the cucumber flesh for the dip.
- Spread the cucumber ribbons on your work surface.
- Place 3–4 lettuce leaves at the base of each ribbon.
- Add a few julienned carrots to the lettuce leaves.
- Roll cucumber around lettuce and carrot.
- Secure each cucumber roll with a toothpick.
Cucumber dip
- In a bowl, mash cucumber flesh with a fork.
- Add sour cream, lime zest and juice.
- Season to taste and serve with cucumber rolls.
