Ingredients

1 bag (907 g) new potatoes, scrubbed and halved
60 mL (¼ cup) sliced almonds
45 mL (3 tbsp.) unsalted butter
60 mL (1/4 cup) chopped fresh flat leaf parsley
30 mL (2 tbsp.) chopped fresh thyme leaves
1 lemon, zest and juice
2 mL (1/2 tsp.) salt

Directions

Place potatoes in a saucepan filled with 5cm (2 in.) of salted water and bring to a simmer. Cover with lid and steam cook until just fork-tender, about 12 to 15 minutes. Drain and set aside.
Meanwhile, toast almonds in a large, dry skillet over medium heat, tossing occasionally until golden brown, about 5 minutes. Set aside.
Add butter to skillet and swirl over low heat until butter stops frothing and turns a light brown colour, about 25 seconds. Remove from heat and stir in herbs, lemon zest, lemon juice and reserved toasted almonds. Add drained potatoes, toss gently to coat with mixture, and season with salt.
