When the flavors of Greece intermingle between two slices of bread, it gives a turnkey gourmet dinner!

In a medium microwave-safe bowl, heat the spinach, 1 to 2 minutes, until thawed but still cool.

Finely chop the garlic and grate the mozzarella cheese. Add to the bowl with the spinach.

Crumble the feta cheese. Add to the bowl and mix.

Place 4 slices of bread on a clean work surface and spread the filling over them. Close in a sandwich with the other 4 slices.

In a large non-stick skillet preheated over medium heat, melt 5 ml (1 teaspoon) of butter. Using a pastry brush, spread the melted butter in the pan.

Place 2 sandwiches in the pan and cook, 2 or 3 minutes, until the bread is golden brown, pressing down with a spatula.

Turn over and continue cooking for 2 or 3 minutes, until the bread is golden brown. Remove from skillet and set aside.

Reduce the heat to medium-low and repeat steps 6 and 7 with the other sandwiches, adding 5 ml (1 tsp) of butter.

Cut the grilled cheese in half and serve with a Greek salad.
