- Preheat barbecue at medium-high. Oil grill.
- Grill cheese cubes for a few minutes until golden. Remove and set aside.
- In a bowl, mix the watermelon, mint, remaining olive oil, lemon zest and juice, and balsamic vinegar. Salt and pepper to taste.
- Add cheese cubes to salad and toss gently.
