1. Preheat barbecue at medium-high. Oil grill. 
2. Grill cheese cubes for a few minutes until golden. Remove and set aside.
3. In a bowl, mix the watermelon, mint, remaining olive oil, lemon zest and juice, and balsamic vinegar. Salt and pepper to taste.
4. Add cheese cubes to salad and toss gently.
