In a bowl, combine the sweet soy sauce, tamari, and 1 tbsp. of the sesame oil. Set aside.
In a large non-stick pan or wok, heat 1 tsp. of oil. Cook the meat for 1 minute on each side. Reserve in a bowl. Add 2 tbsp. of the sauce. Mix gently. Set aside.
In the same pan, heat the remaining oil. Cook the garlic, ginger, and green onions for 1–2 minutes. Add the broccoli, red pepper, and jalapeno pepper. Cook for 3–4 minutes.
Add the rice and beaten eggs. Combine. Cook for 3–4 minutes. Add the remaining sauce and bean sprouts. Mix well. Cook for 2–3 minutes.
Garnish with chopped peanuts, sprouts, and green onions.
Chef’s secret
Adding beaten eggs to the fried rice enhances the flavour and adds moisture. As a result, the rice will be less dry and much tastier.
