In a large pot, set water to boil.
Pat tofu dry and slice; then cut diagonally into triangles and set aside.
In a bowl, combine maple syrup, soy sauce and garlic. Set aside.
In a skillet, heat oil and brown tofu triangles for 2 minutes. Flip and add sauce. Reduce heat to medium and simmer for 6 to 8 minutes or until sauce becomes syrupy.
Meanwhile, cook beans for 4 minutes in boiling water. Add Asian noodles and continue cooking for an additional 3 minutes. Drain noodles and beans, return to pot and add sesame oil, salt and pepper to taste.
Serve maple tofu over noodles and beans. Top with sesame seeds to taste.
