1. Preheat the oven to 220 °C (450 °F).

2. Cook the broccoli for 1 minute in a pot of boiling water, then immerse it in ice water to stop the cooking process. Strain and set aside.

3. On a work surface covered with flour, seperate the dough into four and roll them out to form 4 circles of 7 to 8 inches in diameter.

4. Spread the sauce over half of the dough. Add the spinach, smoked meat, blanched broccoli, and cheese mixture.

5. Fold the dough in half to make a semicircle. Press down the outer edges of the dough to seal it tightly.

6. Brush the calzone with olive oil.

7. Bake in the oven for 15–17 minutes (or until golden brown).

8. Remove from the oven and serve immediately.

Chef’s secret (if desired)

• Place a baking sheet upside down in the oven. Preheat the oven to 220 °C (450 °F). For a crispy crust, cook the pizza on the hot baking sheet. This will make the crust perfect, just like a pizza you would get in a restaurant.
