Directions

Preheat pressure cooker on “Sear” or “Sauté” for 2–3 minutes.
Heat oil. Brown meat on both sides. Season with salt and pepper to taste. Remove and set aside on a plate.
Add onion and garlic to the pressure cooker. Sweat for 1 to 2 minutes. Add chicken broth, orange juice concentrate, and ketchup. Stir. Add meat to the sauce.
Cover and select “Pressure cook.”Cook for 55 minutes.
Depressurize machine and remove lid. Place meat in a bowl. Shred. Keep warm and reserve cooking juices to make the BBQ sauce.

Sauce:

Place all sauce ingredients in a small saucepan. Bring to a boil. Lower heat to minimum and reduce gently for 45–60 minutes, or until thickened. Remove from heat. Set aside.

Salad:

In a bowl, combine all salad ingredients. Set aside.
Add warm BBQ sauce to pulled pork, to taste. Combine gently.
Warm up hamburger buns and lightly brush with mayonnaise.
Add BBQ pulled pork and top with crunchy salad.
Serve warm and enjoy!
