Directions

  1. Finely chop eggs and place in a bowl. Add shrimp, anchovies, capers, lemon zest, olive oil, and mayonnaise.
  2. Season with pepper and mix well to combine. Set aside.
  3. Slice rolls in half. Spread 15 mL (1 tbsp.) egg mixture on two of the four halves.
  4. Top with 6 or 7 asparagus and cover with remaining egg mixture. Close rolls with remaining two halves.
  5. Heat a non-stick skillet. Brush both sides of ciabatta sandwich with some olive oil and grill lightly in the skillet, pressing down gently.
