Directions

Directions for pork marinade

Combine all marinade ingredients.
Marinate the pork tenderloins for at least 6 hours or preferably overnight.

Directions for shrimp marinade

Combine all marinade ingredients.
Thaw shrimp in cold water and then shell them.
Marinate shrimp for at least 30 minutes.
Preheat the oven to 160°C (325°F).
Remove pork from marinade and drain.
Heat a little peanut oil in a large skillet over medium-high heat and sear pork tenderloins on all sides until nicely browned.
Place pork on a baking sheet and bake 10 to 15 minutes (for medium-rare doneness).
Meanwhile, pour marinade into skillet, bring to a boil, reduce heat, and simmer for a few minutes until desired consistency is obtained (adding a little water as needed).
Keep warm.
In a wok or another skillet, heat a little peanut oil over high heat and stir-fry onion for 1 minute.
Add spices. Drain shrimp and add to wok. Stir-fry shrimp for 2 to 3 minutes and then add shrimp marinade.
Keep warm.
When pork tenderloins are ready, remove from oven, cover with foil wrap, and let sit for 2 minutes.
Cut pork tenderloins into 2.5-cm (1-in.) thick slices.
Top the pork with reserved sauce and serve with shrimp and white rice.
Accompany with blanched asparagus that has been stir-fried in butter, and then garnished with a pinch of salt and lime zest.
Sprinkle with some fresh cilantro or Thai basil, if using.
