COOK THE IMPOSSIBLE™
In a bowl, combine herbs, spices and Impossible™ Burger. Shape mixture into flat oval-shaped patties. In a skillet set over medium-high, heat 10 mL (2 tsp.) olive oil and grill each oval piece for 2–3 minutes on each side. Set aside.

MAKE TZATZIKI SAUCE
Peel and dice cucumber, then chop garlic and dill. Mix with yogurt and lemon juice. Whisk until smooth. Slowly add remaining oil and continue whisking until blended.

ASSEMBLE GYROS
Slice cherry tomatoes and red onion. Garnish each pita with Impossible™ Burger oval patty, cherry tomatoes, red onion and tzatziki sauce. Season to taste with salt.
