Ingredients

3 cloves garlic
2 carrots
1 onion
2 celery stalks
1 chicken carcass
1 sprig thyme
1 sprig parsley
4 bay leaves
6 cloves
5 mL (1 tsp.) pepper
salt, to taste
4 L (16 cups) water

Directions

Peel garlic. Coarsely chop carrots, onion and celery.
In a large pot, add all ingredients and cover with cold water. Bring to a boil and simmer over medium heat for 2 hours.
Use a slotted spoon or ladle to skim foam off surface from time to time.
Strain broth and serve.
To freeze, let broth cool and skim off fat.
