- In a bowl, combine dry ingredients.
- In another bowl, combine milk, buttermilk, melted butter, and egg yolks.
- Add this mixture to dry ingredients. Mix until smooth without overmixing.
- In another bowl, whisk egg whites until peaks form.
- Using a spatula, gently fold egg whites into mixture without knocking out too much air.
- Spray the inside of a hot waffle maker with baking spray (PAM).
- Pour half to three quarters of a cup of mixture into the waffle maker and spread lightly. Cook for 3–4 minutes or until golden.
- Serve warm with your choice of toppings.
Chef’s secret
If the batter is too thick, dilute it with a little milk. The batter keeps in the refrigerator for 3 to 5 days.
