In a bowl, mix eggs, water, miso, ginger, sesame oil and half the sesame seeds.

Heat oil in a non-stick skillet.

Add egg mixture. Gently stir and slowly scramble to desired doneness.

Serve immediately and garnish with remaining sesame seeds, hot pepper and cilantro to taste.
Chef’s Secret: Miso is a highly concentrated paste, so go easy on the salt.
