- Preheat the oven to 375 F (190 C) and butter a large 13 x 9-inch baking dish and set aside.
- Dice your loaf of bread and place in the prepared pan.
- Pour the following 8 ingredients in a blender, from coconut milk to ground nutmeg. Pulse a few times until smooth, then pour the mixture over the bread. Push the bread cubes into the mixture so that they are saturated with all the liquid.
- Prepare the pecan and orange filling by mixing all the ingredients together then tossing.
- Spread it evenly over the bread. Press in the filling lightly with your hands. Bake the pan of French toast for 35 minutes. Let cool 10 minutes before cutting into portions and serving drizzled with maple syrup.
