1. In a large saucepan of 3 cups water, cook rice according to package instructions; set aside.
2. Heat canola oil in a large stockpot over medium heat. Season chicken with salt and pepper, to taste.
3. Add chicken, shallots and garlic to the stockpot and cook for about 3-5 minutes, until golden.
4. Stir in red curry paste and ginger for about 1 minute, until fragrant.
5. Stir in coconut milk and bring to a boil; reduce heat and cook, uncovered, stirring occasionally, for about 10-15 minutes, until reduced and thickened.
6. Stir in broccolini until just tender, about 3 minutes.
7. Remove from heat; stir in green onions, cilantro and lime juice; season with salt and pepper, to taste.
8. Serve immediately with rice.
