- Rub inside of fondue pot with garlic. Keep the clove for another use.
- Stir together the cheese, cornstarch, and nutmeg in the pot.
- Add wine. Heat over low heat, stirring constantly with a wooden spoon, until cheese has melted and mixture is smooth. Adjust seasoning.
- Place fondue pot on its burner. Serve immediately, with bread cubes and your choice of other accompaniments (apple or pear cubes, nuts, dry sausage, etc.).
CHEF’S TIP
You can add your favourite fresh herbs just before serving for a little extra colour and flavour.
