- In a large skillet over medium-high heat, brown the pork chops in the oil. Season with salt and pepper. Place in a slow cooker.
- In the same skillet, brown the onions in the leftover pork cooking fat. Sprinkle with the flour and mix well. Add the broth and mustard. Bring to a boil while stirring. Season with salt and pepper. Pour over the pork chops in the slow cooker.
- Cover and cook on Low for 5 hours.
- When ready to serve, add the cream to the sauce. Serve the pork chops and mustard sauce with a green salad or buttered noodles, if desired.

Although pork chops are an inexpensive cut and often used in slow cooker recipes, sliced pork shoulder will be even more tender when cooked this way.
