Preheat the BBQ (or oven) to 250 °C (500 °F).

In a resealable bag, combine all marinade ingredients.

Add pork. Let marinate for 1 hour at room temperature.

Fold pork pieces in half and thread onto a long skewer.

In a bowl, combine marinade ingredients. Season with salt and pepper to taste. Set aside.

Cook skewers on a hot BBQ for 15–20 minutes, turning them while cooking to grill each side.

Remove from heat. Hold skewer upright on a cutting board and slice meat vertically (as in a restaurant) into thin slices. Keep warm.

Place toppings on serving plates. Season with oil, sumac, salt and pepper. Garnish with sliced pork. Drizzle with as much dressing as desired.

Serve with pita bread and a lemon wedge.
Chef’s Secret: Let the meat marinate overnight to give it a lot more flavour and make it even more tender.
