Directions

  1. Preheat oven to 190°C (375°F).
  2. Heat butter and oil in a pan and fry veal until browned on both sides. Salt and pepper.
  3. Wrap veal in aluminum foil and bake for about 15 minutes.
  4. Over medium heat, add shallot and deglaze with wine (or apple juice), scraping bottom of pan with a wooden spoon. Reduce by half.
  5. Over low heat, incorporate cream and cheese by stirring until cheese is melted, about 5 minutes. Season generously with freshly ground black pepper.
  6. Serve veal with sauce, asparagus and mashed sweet potatoes.
