Directions

  1. In a pot of boiling water, cook orzo according to package directions. Drain and set aside.
  2. In a large skillet set over high heat, heat oil and sauté shallots for 1 minute.
  3. Add spinach and cook until wilted, about 2 minutes.
  4. Add chickpeas, lemon zest and juice and zaatar seasoning. Mix well.
  5. Add orzo and continue cooking for 2 minutes. Season with salt and pepper to taste.
