Combine sugar and water in a saucepan. Mix. Bring to a boil without stirring, until caramel turns amber (about 10-15 minutes). In a bowl, mix remaining sauce ingredients.
Add sauce mixture to caramel. Stir well. Simmer gently until caramel has fully melted and sauce has a syrupy consistency. Set aside.
Place beef strips, beaten egg, and half of the cornstarch in a bowl. Mix well.
Preheat fryer.
Lightly dredge beef strips in remaining cornstarch. They should have a whitish appearance before frying.
Deep fry for 2–3 minutes or until crispy and golden brown. Drain.
Combine orange caramel sauce and crispy beef. Mix. Add orange pieces. Mix.
Serve immediately with steamed bok choy and white rice. Top with sesame seeds to taste.
