- Soak 4 wooden skewers in water for 1 hour.
- Preheat barbecue to medium. Combine beef consommé, wine, oil and garlic in a bowl. Set aside. Lay slices of each onion on a work surface and thread onto a brochette through centre of rings. Generously brush both sides of slices with consommé mixture.
- Place brochettes on pre-oiled lower barbecue grill. Cook for 5 minutes per side or until onions are done and lightly browned. Turn off barbecue. Place brochettes on upper barbecue grill.
- Sprinkle cheese and chives evenly over brochettes and let stand covered for 5 minutes or until cheese has melted. Serve with fish, chicken or grilled meat.
Variation: Replace the white wine with red wine and chives with fresh thyme. You can substitute the onions with other varieties, such as yellow, white or Spanish onions.
