Craving a lemony treat in less than 15 minutes? Your wish has come true with this quick microwave cake!
- Melt butter in a small microwave-safe mug.
- Zest lemon using a fine grater. Set aside 1 pinch of zest for garnish and add the rest to the mug.
- Add flour, sugar, baking powder, salt and milk to the mug. Squeeze 2.5 mL (½ tsp.) of lemon juice into a small bowl, then squeeze remaining lemon juice into mug and mix with a fork.
- Microwave for 1 minute 30 seconds and let stand for 5 minutes.
- Meanwhile, add icing sugar to bowl with reserved lemon juice and mix.
- Pour icing over cake and garnish with lemon zest. Serve.
