In a large bowl, combine all marinade ingredients. Divide marinade into 2 portions.
Place the first half of the marinade in an airtight bag. Add minced garlic and beef cubes. Mix. Let marinate for 1 hour at room temperature.
Place the other half of the marinade in a small bowl. Add maple syrup. Reserve for brushing.
Drain beef cubes. Thread a slice of green onion onto a skewer. Add 3–4 pieces of marinated beef. Repeat with remaining onion slices and beef cubes.
Cook skewers for 2 minutes on each side in a very hot cast iron pan or on a preheated barbecue grill over high heat. Brush with reserved marinade while cooking.
Remove from heat.
Combine sesame seeds and coconut.
Serve skewers immediately. Brush with remaining marinade and sprinkle with sesame-coconut seed mixture.
Served with steamed white rice and lime wedges.
