Directions

  1. Combine gremolata ingredients in a small bowl and set aside.
  2. Cook linguine according to package directions. In the meantime, heat half the oil in a skillet and cook pork strips for about 5 minutes, or until cooked and golden brown. Make sure the pork is still a bit pink on the inside. Set aside.
  3. In the same skillet, add remaining oil and sauté onions and zucchini for a few minutes. Deglaze with marinara sauce, season with salt and pepper, stir well, and simmer for 2 minutes.
  4. Serve strips of pork over a bed of linguine topped with gremolata.
