Directions

  1. Preheat oven to 300°F (150°C). Lightly coat a 24-cup mini muffin tin with cooking spray.
  2. Combine bread, apricots, prunes and cranberries in a large bowl. In a separate bowl, whisk the eggs with the sugar until pale yellow; whisk in apple juice, milk, vanilla and salt.
  3. Pour over bread mixture; soak for 5 minutes.
  4. Divide bread mixture between muffin cups. Bake for 20 minutes or until set. Cool slightly and garnish with peach ice wine jam.
