- In a saucepan, cook potatoes in boiling water until tender. Drain and set aside
- Heat butter in another saucepan over medium-high heat. Add flour and whisk continuously for 1 minute. Add cream and butter and while whisking, continue cooking for about 5 minutes or until sauce thickens. Remove from heat. Add cheese and incorporate well. Set aside.
- Cook bacon in a skillet over medium-high heat until partially cooked. Add onion and cook until bacon is done and the onion is translucent. Add potatoes and cook 1 or 2 minutes. Reduce heat to low and add cheese sauce. Mix well and reheat.
- Garnish with parsley and serve with chicken or veal and a green vegetable
