Place the beef tournedos on a work surface. Wrap a slice of bacon around each, using kitchen string.
- Season the tournedos with salt and pepper on both sides. Temper for 1 hour.
- Pour a third of the garlic butter into an airtight bag. Add the shrimps. Leave to marinate for 1 hour.
- On a very hot BBQ (500°F), sear the tournedos for 2 to 3 minutes on each side. Remove from the heat and finish cooking indirectly for 7 to 10 minutes, or until desired doneness. Remove from heat and place on a plate. Brush with another third of the garlic butter. Cover with aluminum foil and set aside for 5 to 10 minutes.
- Meanwhile, on the hot grill of the BBQ, cook the shrimps for 4 to 5 minutes. Remove from heat and place on a plate.
- Serve and accompany with the remaining garlic butter and fresh herbs.
