- In a large bowl, combine olive oil, white wine vinegar and maple syrup.
- Add spring mix, escarole, Asian pears, apples and red onion. Toss until well coated. Salt and pepper to taste.
- Divide among 4 plates and garnish generously with Parmesan slivers. Serve as a side dish with fish or grilled chicken.
