Nothing is more convivial than sharing a fondue with family and friends. And to make dinner even more memorable, make your own homemade broth! It’s much easier than it sounds. Here’s how to prepare a basic broth, as well as ideas for creating original versions.
The basics of a fondue broth
To make a fondue based on a clear broth, simply choose from these three categories of ingredients:
- Broth reduced in salt: chicken, beef or vegetable
- Herbs: garlic, onions, ginger, peppers, etc.
- Taste carriers: wine, soy sauce, hot sauce, etc.
- Spices: herbs, cumin, cinnamon, paprika, etc.
Here’s how to cook the broth:
- Cut the herbs (garlic, onions, etc.) coarsely and combine them with the broth in a saucepan.
- Bring the broth to a boil and simmer for about 15 minutes over low heat.
- Strain the herbs and pour the broth into the pot.
For safety reasons, the broth must remain very hot in the pot for the duration of the meal.

- Thai fondue
Infuse ginger, lemongrass, garlic, lime, soy sauce and fish sauce in your broth.
- Japanese fondue
Add fresh ginger, dried nori seaweed and carrot sticks and soy sauce to a chicken broth.
- Miso fondue
With miso, dried fish and garlic, you will get a delicious fondue with Asian-inspired flavours.
- Mediterranean fondue
Choose beef broth and add plenty of garlic, red onion, oregano and a Parmesan crust to enhance the flavour.
- Middle Eastern fondue
Simmer chicken broth with harissa, parsley and cumin.
