-
Preheat the oven to 180°C (350°F). Put the grill at the center of the oven. Line a baking sheet with parchment paper (or a reusable baking sheet).
-
In a medium microwave-safe bowl, combine water, soy sauce and maple syrup. Cook, 1 or 2 minutes, until the mixture is heated through.
-
Add the TVP and mix until the liquid is completely absorbed. Spread on the baking sheet and bake for 10 minutes.
-
Meanwhile, prepare the dressing. In a small bowl, combine mayonnaise, yogurt, relish, mustard and paprika. Set aside.
-
Dice the bread.
-
Stir the TVP and leave space for the bread.
-
Place the bread cubes on the baking sheet next to the TVP. Continue baking for 8 to 10 minutes or until the bread is lightly browned.
-
Thinly slice the lettuce and place in a large serving bowl.
-
Cut the onion in half then thinly slice it. Slice the pickles into rounds and dice the tomatoes.
-
Grate the cheese.
-
Spread the vegetables and cheese over the lettuce. Garnish with TVP and croutons.
-
Drizzle dressing over salad and serve.
