Directions

  1. Preheat the oven to 160˚C (325˚F).
  2. Place the pork loin in a roasting pan. Combine all the ingredients in a small bowl and pour over the roast, ensuring that the pecans are evenly distributed on top. Insert a meat thermometer in the centre of the roast.
  3. Place in the oven and roast for 1 hour 30 minutes or until the meat thermometer reads 70˚C (160˚F). Baste frequently with the pan juices. Remove from the oven, cover with aluminum foil, and let stand for 15 minutes.
  4. Spoon pecans and pan juices over each slice and serve with a mixture of white and wild rice.
