Preheat oven to 175 °C (350 °F).
Place open submarine buns on a parchment-lined baking sheet. Set aside.
In a large skillet set over medium-high heat, heat oil and brown onion and sausages for 3 minutes.
Reduce heat to medium and add sauce, spinach, crushed peppers, salt and pepper. Continue cooking for 2 minutes or until spinach has wilted.
Top buns with sausage, sauce and spinach mixture. Cover with cheese and bake for about 8 to 10 minutes or until cheese melts.
