Directions

  1. In a bowl, mix the lobster meat, shrimp, tarragon, and green onion. Keep refrigerated. 
  2. On a work surface, place half of the rice inside a round cookie cutter. Press down to make an evenly shaped cake. Repeat with the rest of the rice to make two rice cakes for the burger bun. 
  3. Press one of the rice cakes into the sesame seeds. This will be the top bun. 
  4. Garnish the bottom rice cake with tartare, then add the julienned apple and pear. Close the burger with the sesame-seed rice cake.
